Marinated Olives


This is for my foodie friend Leslie. Love ya!

2 cups black and/or green olives rinsed and drained

1/2 cup olive oil

2 3x 1/2 inch strips of lemon peel

1/2 cup lemon juice

4 to 6 garlic cloves, sliced

1 tsp dried oregano

1 bay leaf

1/2 tsp crushed red pepper

In a 1 quart jar with a screw top lid, combine all of the ingredients.  Cover and shake to coat olives.  Marinate in the refrigerator for 2 day, shaking jar occasionally.

To serve, let olives stand at room temperature for 1 to 2 hours.  Drain olives, discard bay leaf and marinade.  Makes 8-10 servings.
