Recently, I received an invitation to a Cookie Swap Party. I have to bring 6 dozen of homemade cookies to share. Its a great opportunity to taste some new cookie recipes and have a some holiday fun. This recipe is a simple shortbread cookie with a little twist.
1 package of Sugar Cookie Mix (I used Betty Crocker)
½ cup unsalted butter, melted
½ cup finely chopped almonds
1 tsp almond extract
Combine all the ingredients in a medium mixing bowl. Mix well. Chill dough for 1 hour. Shape cookie dough into small balls. Approximately teaspoon size. Place on an ungreased cookie sheet. Bake at 375 degrees for 8-10 minutes. Makes 3 dozen cookies.
**To make them a little more special. Sprinkle with raw sugar before baking.
