1 8 oz. package of Imitation Lobster meat, cut up into ½ inch pieces
3-4 cups of cooked pasta shells
1 Velveeta Cheese Mini Block, cubed,
2 5oz. cans of evaporated milk
1 clove of garlic, minced
1/8 cup of onion, diced
½ tsp Old Bay Seasoning
¼ tsp of black pepper
Pinch of Season Salt
Dash of Hot Sauce Optional
1 cup of shredded sharp cheddar cheese (reserve a ½ cup for topping)
½ cup of shredded jack cheese
In a large skillet heat olive oil over medium heat. Saute onions and garlic for 2 to 3 minutes, be careful not to burn. Next add lobster meat, Old Bay seasoning, pepper and season salt. Saute for 2 minutes. Now pour in both cans of evaporated milk and stir until well blended. Once milk starts to bubble add Velveeta Cheese, stir until cheese is completely melted. Now add shredded cheeses and a couple of dashes of hot sauce. Be sure to taste sauce and adjust flavors to your liking. Top with the remaining ½ cup of shredded cheese.
Bake at 375 degrees for 20 – 25 minutes or until completely heated through.
